Ingredients
  

  • 1 lb extra lean ground beef, turkey, or chicken
  • 2 tbsp olive oil
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • ½ tbsp fresh garlic (about 3 cloves)   
  • ½ cup Lakanto Monkfruit Sweetener * (erythritol + monk fruit)
  • ¼ cup quinoa flour ** (optional) 
  • 1 - 15 oz can petite diced tomatoes
  • ½ cup water
  • 2 tbsp tomato paste
  • 3 tbsp apple cider vinegar
  • 1 tsp mustard powder
  • tsp nutmeg
  • ½ tbsp smoked sea salt (or regular sea salt)
  • ⅛ - ¼ tsp chipotle powder (optional) 

Instructions
 

  • Brown ground beef in a skillet on medium heat. Once cooked, remove from pan and set aside.
  • Add olive oil, then onions and peppers. Let cook for about 10 minutes.
  • Add garlic and cook for just a couple minutes, stirring frequently to prevent garlic from burning.
  • Add flour and sweetener until well coated.
  • Add tomatoes.
  • Mix water, tomato paste, spices, salt, and apple cider vinegar and add to the skillet.
  • Return meat to the pan and reduce temperature to low. Let simmer for about 10 minutes until the sauce thickens. Serve on your choice of rolls.

Notes

* My choice of sweetener is Lakanto Monk Fruit Sugar Substitute, which is a blend of erythritol + monk fruit. Feel free to substitute a sweetener of your choosing: keto-approved, honey, coconut sugar, etc. I typically use a sweetener that measures similar to sugar.
** Feel free to substitute for another type of flour, or omit completely. The flour will help to thicken the sauce so it not soak into the bread.
