Sloppy Joe Sandwiches

We all have those certain foods that scream: comfort.

I love a messy, rib-sticking sandwich like the sweet+vinegary+smoky Sloppy Joe. Sure, you can buy a can of sauce from the grocery store, but this way you can control your sodium, sugar, and preservatives!

These sandwiches were served on sprouted wheat + spelt rolls (stay tuned for the recipe!)

For many of my recipes, my choice of sweetener is Lakanto Monk Fruit Sugar-Substitute, which is a blend of erythritol + monk fruit. For this recipe, feel free to substitute a sweetener of your choosing: keto-approved, honey, coconut sugar, etc. I typically use a sweetener that measures similar to sugar.

The quinoa flour can be substituted for another type of flour, or omited completely. The flour will help to thicken the sauce so it not soak into the bread.

  • 1 lb extra lean ground beef, turkey, or chicken
  • 2 tbsp olive oil
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • ½ tbsp fresh garlic (about 3 cloves)
  • ½ cup Lakanto Monkfruit Sweetener * (erythritol + monk fruit)
  • ¼ cup quinoa flour ** (optional)

  • 1 tsp mustard powder
  • tsp nutmeg
  • ½ tbsp smoked sea salt (or regular sea salt)
  • ⅛ - ¼ tsp chipotle powder (optional)

Instructions

  • Brown ground beef in a skillet on medium heat. Once cooked, remove from pan and set aside.
  • Add olive oil, then onions and peppers. Let cook for about 10 minutes.
  • Add garlic and cook for just a couple minutes, stirring frequently to prevent garlic from burning.
  • Add flour and sweetener until well coated.
  • Add tomatoes.
  • Mix water, tomato paste, spices, salt, and apple cider vinegar and add to the skillet.
  • Return meat to the pan and reduce temperature to low. Let simmer for about 10 minutes until the sauce thickens. Serve on your choice of rolls.
