Green Goodness

Spring has finally arrived! Well, at least the calendar says so. I’m not overly excited about the snow we’ve had over the last couple weeks, but I know we really need the moisture!

Our family has been through quite a bit of upheaval over the last six months (I may share some more details of our story at some point…) but since we’ve progressed back toward a certain level of consistency, I am back to recipe-testing and trying to tweak things so I can share them with you.

The following beverage recipe is perfect for those times when I need a mid-afternoon pick-me-up, and I know I need some caffeine and protein to help me get to dinner!

I’ve named it Green Goodness for a reason: both the spinach and matcha give it that bold green color. Now before you go and mention your distaste for matcha and that it tastes like grass clippings, let me assure you that the added lemonade helps to brighten and mask the earthiness. You could certainly add lemon juice and your sweetener of choice, but I love the convenience of the lemonade packets. They are sweetened with stevia and only 1 gram of sugar per serving! If you have never used baobab, it has a lovely citrusy flavor that works really well in this recipe, as well as other fruit smoothies.

Ingredients
  

  • 3 cups water
  • ½ cup protein powder
  • ¼ cup baobab
  • 10 ounces baby spinach (about 4 large handfuls)
  • 4 packets True Lemon® Lemonade
  • 1 tbsp matcha
  • 3 tbsp MCT Oil

Instructions
 

  • Blend all of the ingredients in a blender until completely smooth. Pour into a half-gallon mason jar and top with water. Keep refrigerated. Shake well before serving.
